Vegetariese fajita
Ingredients
- 1 ui, gekap
- 30 ml (2 e) olyf- of avokado-olie
- 8 ml (½ e) gekapte rissie
- 1 rooi soetrissie, gekap,
- 10 ml (2 t) fyn komyn
- 15 ml (1 e) tamatiepasta
- 125 ml (½ k) water
- 5 ml (1 t) suiker
- 1 x 410 g-blik heel, geskilde tamaties, fyn gedruk
- 1 x 400 g-blik rooi nierbone gedreineer
- Vir die guacamole:
- 1 avokado
- suurlemoensap na smaak
- 4 tortillas
- 125 ml (½ k) wit cheddarkaas, gerasper
- ’n handvol basiliekruidblare

- 1 onion, chopped
- 30 ml (2 tbsp) olive or avocado oil
- 8 ml (½ s) chopped chili
- 1 red bell pepper, chopped
- 10 ml (2 tsp) ground cumin
- 15 ml (1 tablespoon) tomato paste
- 125 ml (½ cup) water
- 5 ml (1 teaspoon) sugar
- 1 x 410g can whole peeled tomatoes, crushed
- 1 x 400g tin of red kidney beans drained
- For the guacamole:
- 1 avocado
- lemon juice to taste
- 4 tortillas
- 125 ml (½ cup) white cheddar cheese, grated
- A handful of basil leaves
Instructions
1. Braai die ui vir 5 min. in die olie oor matige hitte tot sag. Voeg die knoffel, rissie en rooi soetrissie by en braai vir 3 min.
2. Voeg die fyn komyn, tamatiepasta, water, suiker, blik heel, geskilde tamaties en rooi nierbone by. Kook vir 15 min. tot effens verdik. Geur na smaak.
3. Maak intussen die guacamole deur die avokado fyn te druk en die koljanderblare en suurlemoensap na smaak te meng. Proe en geur.
4. Maak die fajita’s deur die tortillas met skeppies guacamole, ’n bietjie kaas, die geurige bone en basiliekruidblare te vul. Vou of rol dit toe en smul.
English recipe
1. Fry the onion for 5 minutes in the oil over medium heat until soft. Add the garlic, pepper and red pepper and cook for 3 minutes.
2. Add the ground cumin, tomato paste, water, sugar, can whole, peeled tomatoes and red kidney beans. Cook for 15 minutes until slightly thickened. Season to taste.
3. Meanwhile, prepare the guacamole by crushing the avocado and adding the coriander leaves and lemon juice to taste. Taste and season.
4. Prepare the fajitas. Scoop guacamole, a little cheese, the spicy beans and basil filling into tortillas . Fold or roll it up and tuck.
