Delicious date and sherry chicken

Ingredients

• 2 tbsp. (30 ml) olive oil
• 1 tbsp. butter (15 ml)
• 1 tbsp. (15 ml) ginger, chopped, and garlic, chopped
• 4 spring onions, chopped
• 1 t (5 ml) chilli, chopped
• ¼ c unsalted roasted cashew nuts
• 500 g deboned chicken thighs (available at supermarkets)
• ¼ c (60 ml) sherry or sweet wine
• 3 tbsp. (45 ml) soy sauce
• 4 pitted dates, chopped
• Juice of one lime
• 2 handfuls of chopped coriander leaves
