Serves 4
1 Season 4 steaks with salt and ground black pepper. Set aside for 15 minutes.
2 Heat 15 ml (1 tablespoon) avocado oil and 15 ml (1 tbsp) butter in a pan over medium heat.
3 Fry 1 onion (peeled and sliced thick diagonally) and 10 ml (2 tsp) balsamic vinegar therein until tender.
4 Stir in 15 ml (1 tbsp) wholegrain mustard and set aside.
5 Brush the steaks with avocado oil and fry for 3-4 minutes on each side on a hot griddle. Rest.
6 Toast/grill 4 slices country bread.
7 Arrange rocket, roasted tomatoes and steaks on 2 slices of bread.
8 Spoon onion on top and place the other slices of bread on top. Cut each sandwich into 3 parts. Bon appetite!
