125 ml (½ cup) plain, low-fat yogurt mixed with 1 small grated cucumber
5 ml (1 t) chopped garlic and a few sprigs of mint and dill, chopped. Season with salt.
8 low GI wholegrain bread rolls
2 tomatoes, sliced
1 red onion, finely sliced
handful of herbal leaves like rocket
Instructions
1 Soak the bread crumbs in the yogurt. 2 Heat 5 ml of olive oil in a pan and slowly fry the onion and garlic. 3 Mix the bread crumbs, meat, feta, mustard, lemon zest and fried onions. Season with salt and pepper. Form palm sized burger patties (about 1.5 cm thick). Chill 15 minutes in the refrigerator. 4 Heat a pan. Brush the burgers with oil and grill on each side until browned and cooked. Set aside. 5 Build the burgers: Put the bottom half of a bun on a plate, spoon a layer of sauce on it, followed by the leaves, tomatoes, onions, the burger patty, a spoonful of tzatziki and top it with the other half of the bun.
