1 Soak 2 long pieces of sausage casings in water until soft.
2 Tighten the casings over the spout of the sausage-making apparatus of a blender and push back untill only a short piece remains. Tie a knot at the last end.
3 Season 1 kg (2 bags) defrosted, basic mince mixture with salt and pepper. Add the meat to the top of the machine and fill the casings with it. Do not make the sausages too tight – the casings tear easily.
4 Twist the long sausage in a few places to form portion sizes. Cut and tie a knot at the top.
5 Fry the sausages in heated olive oil in a medium pan or on the barbecue.

6. Season 250 g cherry tomatoes with salt and roast at 180 ° C in the oven until they begin to burst open, set aside.
7 Fry 2 large onions (diagonally thick slices) slowly in 45 ml (3 tablespoons) butter until soft and caramel color.
