Makes 12
- 2 egg whites
- 80 ml (1/3 c) caster sugar
- 80 ml (1/3 c) cake flour, sifted
- vanilla
- 45 ml (3 tbsp) butter, melted
Preheat the oven to 160 ° C. Cut an 8 cm circle acetate (transparant paper). Cut pieces of paper measuring 12 cm x 12 cm to write messages on.
1 Beat the egg whites until soft peaks form. Add the sugar gradually while beating.
2 Fold in the flour and then add the vanilla and butter.
3 Place the stensil on a baking sheet with a silicone sheet (silpad). Spoon a flat tablespoon of batter into the center of the stencil. Spread flat and smoothen, repeat. Make two cookies at a time. Remove the stencil and bake for about 5 minutes until the sides start coloring.
4 Place the baking sheet in the oven to keep cookies flexible longer. Loosen the cookies with a palette knife. Put a message slip in the center of each circle, fold to form a half moon shape on the edge of a cup so that the halfmoon shape hangs sover the cup. Allow to cool. Repeat with the remaining dough.
