Ingredients
Reader Annamarié Spies is the October 2014 'Teetydtreffer' winner. She has baked the cake the last 34 years with great success. Delicious, especially if you love dates!
250 g dates
5 ml (1 t) baking soda
250 ml (1 c) boiling water
250 ml (1 c) sugar
125 g butter or margarine
2 extra-large eggs, beaten
10 ml (2 t) baking powder
500 ml (2 c) flour
5 ml (1 t) vanilla extract
200 g walnuts (optional), coarsely chopped
Stuffing
150 g dates, finely chopped
500 ml (2 c) sugar
15 ml (1 tbs) butter
125 ml (½ c) water
walnuts to garnish
glazed fruit for decoration (optional, we have dusted the cake lightly with icing sugar)
Instructions
Preheat the oven to 180 ° C.
1 Line two 23 cm cake pans with baking paper. 2 Sprinkle baking soda on the dates, add the boiling water and let soak until soft. Mash the dates with the back of a fork. 3 Beat the butter and sugar together and add the beaten eggs. Sift the baking powder and flour and add to the egg mixture.| 4 Add the nuts and vanilla and mix. 5 The mixture should be soft enough to run off the back of a spoon. 6 Spoon the batter into the prepared cake pans and bake for 35-40 minutes or until a skewer comes out clean.
Stuffing
1 Boil all ingredients together until smooth and spreadable. 2 Allow the cake to cool well and spread the filling between two layers of the cake and on top, if desired. 3 Decorate with walnuts and glazed fruit, or dust with icing sugar like us.
