1 Toast the bread crumbs for about 7 minutes on a baking sheet until golden.
2 Dip the ravioli in the egg and let the excess egg drip off. Cover with bread crumbs and fry 4 ravioli-envelopes at a time until golden brown.
3 Remove and drain on paper towels.
4 Melt the butter over low heat, let it cook down until it begins to caramelize. The butter gets a delicious nutty, caramel flavor.
5 Add the sage leaves. Remove as soon as the butter is golden brown.
6 Serve with hot ravioli.
