Serves 20
- 385 g coconut
- 1 x 385 g tin condensed milk
- 5 ml (1 t) vanilla
- 2 egg whites
- a pinch of salt
- 60 ml (¼ c) icing sugar
Preheat the oven to 160 ° C. Spray a baking sheet with non-stick spray.
1 Mix the coconut, condensed milk and vanilla in a large mixing bowl.
2 Beat the egg whites until foamy. Add the salt and beat until stiff peaks form. Fold gently with a metal spoon into the coconut mixture.
3 Spoon heaped teaspoons (5 ml) of the mixture onto the baking sheet and bake for 15 -20 minutes until the top layer is light brown.
4 Cool and sieve icing sugar over.
