We used these cute chocolate chips we bought at Clicks. You can use Beacon's Mint Thins.
12 chocolate cupcakes
125 ml (½ c) coffee liqueur syrup
1 cup (250 ml) butter icing
5 ml vanilla
15 ml good instant coffee powder
15 ml coffee liqueur (Kahlua)
Instructions
1 Dissolve the coffee powder in the vanilla and liqueur and mix well with the butter icing. 2 Spray the butter icing with a piping bag with a star nozzle on the cupcakes to resemble cappuccino foam. 3 Decorate with chocolate chips.
Chocolate cupcakes
Add 100 g dark chocolate, chopped roughly, and 125 ml (½ c) cocoa powder.
Coffee liqueur syrup
1 Mix 30 ml (2 tbsp) Bailey's coffee liqueur with 125 ml (½ c) basic vanilla syrup. 2 Heat through and paint over the cupcakes.
