Serves 30
- 700 g (3 c) cooked pumpkin, mashed
- 275 g (2 c) self-raising flour
- 2 eggs
- 5 ml (1 t) salt
- 15 ml (1 tbsp.) baking powder
- oil for frying
1 Mix all the ingredients. The mixture should not be too stiff – add a little milk if it is too stiff.
2 Heat a little oil in a pan and spoon a tablespoon full of the mixture into the oil. Cook for 1 to 2 minutes on each side or until golden.
Caramel sauce
- 15 ml (1 tbsp.) butter
- 375 ml (1½ c) sugar
- 200 ml milk
1 Melt the butter and sugar in a medium-sized pan over low heat until it begins to caramelize. Add the milk, stirring.
2 Cook until everything is melted.
3 Serve the fritters with caramel sauce.
