Ingredients Pomegranate salad dressing 180 ml (¾ c) avocado oil 20 ml balsamic vinegar 5 ml (1 t) chopped garlic 15 ml (1 tbsp) brown sugar A handful of chopped parsley 30 ml (2 tbsp) pomegranate seeds 375 ml (1 ½ c) wet biltong slices 100g blue cheese, broken into small pieces Salad ingredients 2 oranges, peeled and sliced 250g strawberries, halved 80 ml (1.3 k) pomegranate seeds 6-8 baby beetroot, cooked and halved A handful of baby herb and radiccio leaves A handful of rocket leaves Instructions 1 Mix all the ingredients for the sauce and set aside. 2 Mix the biltong and 30 ml (2 tbsp) of the pomegranate sauce. 3 Add the rest of the ingredients to the plate and top with biltong. 4 Serve with the remaining dressing.
