Best biltong salad
Ingredients
- Pomegranate salad dressing
- 180 ml (¾ c) avocado oil
- 20 ml balsamic vinegar
- 5 ml (1 t) chopped garlic
- 15 ml (1 tbsp) brown sugar
- A handful of chopped parsley
- 30 ml (2 tbsp) pomegranate seeds
- 375 ml (1 ½ c) wet biltong slices
- 100g blue cheese, broken into small pieces
- Salad ingredients
- 2 oranges, peeled and sliced
- 250g strawberries, halved
- 80 ml (1.3 k) pomegranate seeds
- 6-8 baby beetroot, cooked and halved
- A handful of baby herb and radiccio leaves
- A handful of rocket leaves
Instructions
1 Mix all the ingredients for the sauce and set aside.
2 Mix the biltong and 30 ml (2 tbsp) of the pomegranate sauce.
3 Add the rest of the ingredients to the plate and top with biltong.
4 Serve with the remaining dressing.
