Ingredients
- Pudding
- 500 ml (2 c) flour
- 10 ml (2 tsp) baking powder
- 125 ml (½ c) cold butter
- 2 eggs, beaten
- 65 ml (4 tbsp + 1tsp) milk
- ±45 ml (3 tbsp) apricot jam
- Sauce
- 375 ml (1½ c) boiling water
- 250 ml (1 c) sugar
- 25 ml (5 tsp) butter
Instructions
- Preheat the oven to 180oC. Grease a rectangular ovenproof pan.
- Sift the flour and baking powder. Rub the butter gently into the flour mixture.
- Add the eggs into the mixture and add just enough milk for a stiff dough.
- Roll it out on a flour-sprinkled working surface. Spread a thin layer of apricot jam over the dough.
- Roll into a roly poly shape and place in pan.
- Mix all the ingredients of the sauce and pour over the dough. Bake for about an hour.
- Take the dough out of the oven and cut into slices. Serve with the sauce and a deliciously thick custard.
