Baked Roly Poly

Ingredients

Pudding
500 ml (2 c) flour
10 ml (2 tsp) baking powder
125 ml (½ c) cold butter
2 eggs, beaten
65 ml (4 tbsp + 1tsp) milk
±45 ml (3 tbsp) apricot jam
Sauce
375 ml (1½ c) boiling water
250 ml (1 c) sugar
25 ml (5 tsp) butter

Instructions

Preheat the oven to 180^oC. Grease a rectangular ovenproof pan.
Sift the flour and baking powder. Rub the butter gently into the flour mixture.
Add the eggs into the mixture and add just enough milk for a stiff dough.
Roll it out on a flour-sprinkled working surface. Spread a thin layer of apricot jam over the dough.
Roll into a roly poly shape and place in pan.
Mix all the ingredients of the sauce and pour over the dough. Bake for about an hour.
Take the dough out of the oven and cut into slices. Serve with the sauce and a deliciously thick custard.
